    Church prosphora baking

    Beautiful book with more information than preparing prosphora. My only regret is I make Russian (5 loaves/2 parts) style and Greek style (1 loaf) which not part of the book. NEWROME: To make smaller loaves, simply make enough subdivide the dough. For example, 800gr [5@ 160gr] or 1000gr [5 @ 200gr loaves] or 1600gr [5 @ 320gr loaves]. The instructions in the book explain how to easily increase quantities.

    I had no idea that traditional prosphora is prepared by using a starter and without yeast. Very detailed instructions are provided. If one has the time and patience, this book provides the step by step instructions. I'm in the process of making my starter and I'm looking forward to producing my first "test" loaf. Thanks very much for this very informative reference.
